I have just started taking some vegan vitamins. I am hoping the iodine in them will help my enlarged thyroid and generally make me feel better as I don't have the money to always have a really balanced diet. I will let you know how I get on. RECIPE: Mushroom and Tomato Lasagne
Giving up Soya
In order to try and reduce my swollen thyroid I have decided to give up soya for a while and see if it makes any difference. However I am surprised at the amount of soya in foods. I know that it is used in meat replacement products etc but I didn't know it would be in the flavouring for the noodles I was going to have for lunch (as a replacement for the sandwich I was going to have as the bread didn't have ingredients on so I didn't know if it had any soya flour in).
Any advice on alternatives to soya, especially ways to make creamy sauces etc, would be welcomed.

Busy Day
Yesterday was eventful. In the morning I went to the hospital for the results of my thyroid scan. They said I have a benign goitre which requires no treatment. I am going to increase my iodine levels and reduce my intake of soya, brocolli and cauliflower and see if it makes any noticable difference to its size, and I certainly don't want it getting any bigger.
At lunchtime my 3 year old feel down and hurt her wrist, it was still paining her by the evening so I took her to the hospital for an x-ray. Fortunately she was fine, but I didn't get time to put a new recipe. But I will put one up later today.

Ballet Shoes
I am searching in vain for ballet shoes for my girls. I don't like buying the new leather ones for obvious reasons but they have to have shoes for their classes. I generally get 2nd hand ones but can't find any in their sizes on ebay, the ballet school or freecycle.
I can buy vegan ones online at http://www.alternativesoles.com which is great, but they cost £10 more than the cheapest new ones on ebay. Its a real dilemma. I know that I should get the vegan ones, but it is a real struggle to afford them. What would you do?

Lunch Idea - Noodle Sandwiches
This is a favourite of mine, although a lot of people think it is odd. Just make up a pack of instant noodles (curry flavour is my favourite) and spoon them in the middle of a piece of bread. It is tasty, filling and above all, quick!

Asda Cafe
Tonight I had to get dinner for the kids while were out and the only place that was still open apart from McDonalds was Asda cafe.
I wasn't very impressed. The vegan choices were very limited as cafe's of these type tend to be.
Cold drinks were either orange juice or water (both extremely overpriced). For the kids the only choice they could have in their kids meal was raisins and fresh fruit. They had chips and baked beans, and a carrot and pea vegetable mix (which was drying out horribly) in their main course options. The only positive side at all was the vegan margarine and they did have some soft white rolls it could go on. Not great, but definitely better than my other option!

RECIPE: 2 Potato Mash
Mixing white potatoes and sweet potatoes make a lovely mash as you get the lovely taste of sweet potatoes with the smooth texture of white potatoes.

Lentil Bake with Ketchup
This isn't a recipe as such, because I haven't got the software on this computer to put it on the site. However I thought I would share what I had for supper tonight.
I made a lentil bake using a tin of green lentils, a packet of sage and onion stuffing (with the amount of water it said on the packet), 2 cloves of garlic and a sprinkle of herbs. I mixed it all together and put it in a baking dish in the oven for 30 mins on gas mark 7.
It was lovely with just a small amount of ketchup on the side.

Computer Problems
Apologies for the lack of recipes lately. I spilt coffee on my keyboard and some of the keys stopped working which made it very difficult to work on the website.
I have now got a new keyboard so will be able to start the recipes up again tomorrow. I can't tonight as my heating has broken down so its too cold to stay on the computer long.
