RECIPE: Baseless Pizza

I needed a quick and easy lunch today, but something that would warm me up.  So I thinly sliced two tomatoes and sprinkled mixed herbs and salt on top. Then I grated some soya cheese and put it in the microwave for 2 minutes. A very simple baseless pizza.  If I'd had more time I could have added some fried mushrooms, courgettes or any other suitable vegetable or topped with olives.

That's a great idea. I follow weight watchers, and a pizza base eats up a lot of my days 'points', so this would be a good way to get the pizza taste without the bulk, especially if I go easy on the cheese.
