Chili

Tonight the girls decided they wanted chilli so I made the recipe they both love.

Chop a medium onion and fry in vegetable oil, add a clove of garlic, 1tsp paprika, 1 tsp mixed herbs, pinch salt and enough chilli for your taste.  The add chopped mushrooms and peppers and cook until nice and soft.  Then add frozen tvp and cook until it has defrosted. Then add a drained tin of red kidney beans, a tin of tomatoes and some tomato paste.  I sometimes add sweetcorn at this point too. Leave to simmer until all the ingredients are warmed up and taste to see if you need more salt.

Serve either with rice or in wraps.  When making it with wraps I add various other fillings including some of these: soya mayo, soya cheese, avocado, salsa, finely chopped lettuce and other salad.
