RECIPE: Mushroom Risotto

Melt some vegan margarine in a saucepan and then add finely chopped onion, garlic and mushrooms and fry gently. Add some stock powder and some precooked rice. I used brown rice but white would work too. Mix well and make sure it is thoroughly warmed through. Then add some grated soya cheese. Mine was a mild cheddar style that is orange in colour hence the golden coloured rice in the photo.
