Peppermint Creams

My daughters school are making peppermint creams this week. I really wanted her to be able to make some vegan ones, just to show it can be done (even though she doesn't eat sugar). All the recipes I have found have egg white in them, does any one know of a vegan recipe for them? I would be very grateful.

3 tblsp Tofu
4 tblsp Margarine
500 g Icing sugar
1 bottle Peppermint essence
4 dried Chili peppers
4 tblsp Cocoa powder
1 cup Dessicated coconut.

Sprinkle coconut on a plate.
Beat other ingredients in a bowl.
Roll into small balls, roll in coconut.
Press the top of each ball.
Refrigerate for 24 hours.

Do you know where I can get vegan icing sugar from? The stuff I saw today was made by silver spoon and said it may contain egg.

I'm not sure about chillis in peppermint creams....!!

Buy some sugar from a wholefood shop, then put it in a grinder.

It works very well.

Perhaps American chili peppers are different to ours!
