Couscous for Dinner

We had a delicious dinner of finely chopped shallots, green pepper, mushrooms and tomatoes with herbs, and then added couscous to the pan at the end so it all crisped up beautifully. We all really like couscous and it is so quick to cook it is really convinient and there is so much you can put with it.
